Zwieback Cake - THE Cake of All Cakes

If you would like to try a recipe for a cake that is more delicious and decadent than any other you have ever tried, give this one a whirl:

ZIEBACK CAKE

9 Egg Yolks (Beaten)
1 1/2 Cups Sugar
1 1/8 Cups Chopped Walnuts
17 Zweiback Toasts (Usually in your baby food aisle) - Finely ground
 1 1/2 tsp. Baking Soda

Cream eggs and sugar. Add Zwiebeck toast and bakign powder. Fold walnuts into mixture. Bake at 350 degree for 30 - 45 minutes (until toothpick comes out clean) 

ICING:

1 1/2 Cups Brown Sugar
1/2 PINT Sweet Heavy Cream
1/2 stick butter
1 tsp. vanilla

Cook Brown Sugar and heavy cream together in a saucepan until a drop of it gels in cold water (240 degrees with a candy thermometer). Remove from stove and add butter and vanilla. Beat until cold.

*Warning...do not make the icing for this cake until the cae has cooled as you will want to frost immediately after the icing is complete. It has a tendency to set up and becomes harder to spread

Snickers Salad

Here is one of Kookie's favorites to bring to a pot luck or a dish-to-pass supper. It is always an instant favorite and it takes about 10 minutes to make. Great as a side dish or a dessert!!!

SNICKERS SALAD

2 Apples (peeled, cored and diced)
2 Boxes Instant Vanilla Pudding (prepared)
10 "Fun Size" Snickers Bars (Cut into small pieces)
2 Cups of Grapes
1/2 Cup of Almonds

Prepare the two boxes of vanilla pudding. Before it sets up add Apples, Snickers Bars, Grapes and Almonds. Stir it all up and then refrigerate for two hours. Garnish with whipped cream and maraschino cherries or strawberries for presentation.

Enchilada Casserole

Here is one more dish guaranteed to delight at parties...and easy to put together.

6 Large soft flour tortillas
1 Jar of salsa (large is better)
2 Cups Sour Cream
1 brick Cream Cheese
4 Chicken Breasts - boneless and baked for about 20 minutes, then cut into strips
3 T. Soy Sauce
3 Cups Grated Mexican Blend Cheese

Take Salsa and coat the bottom of a large casserole dish (about an 1/8 inch deep). Rip 2 tortillas into strips and create a bottom layer of them in your dish. In a saucepan, combine sour cream, cream cheese, chicken strips, and soy sauce. Heat on medium heat until cream cheese melts and all the ingredients combine. Pour a half inch layer on top of tortillas. Sprinkle with one cup of the grated cheese. Rip up two more tortillas and created a second layer. Pour the rest of your sour cream chicken mixture on top and spread out. Sprinke with another cup of cheese. Rip up your last two tortillas and create the top layer. On this, pour the rest of your jar of salsa, and then sprinkle your last cup of cheese. If you like things extra spicey, you cn also add a layer of jalapenos in the middle layer. Cover with aluminum foil, bake at 350 degrees for about 25 minutes.

Party Mix

Another recipe for you to throw together for the Superbowl.

Party Mix

6 T. margarine
1/2 tsp. Garlic Salt
1/2 tsp. Onion Powder
4 tsp. Lemon Juice
1 tsp. Lauery's Seasoned Salt
8 tsp. Worcestershire Sauce
7 Cups of Crispix or Rice Chex Cereal
2 Cups Salted, Dry Roasted Peanuts
3 Cups Pretzels
3 Cups Honeynut Cheerios

Melt butter in a roasting pan in the oven at 250 degrees. Remove from oven and stir in garlic salt, onion powder, lemon juice, seasoned salt, and Worcestershire sauce. Add Cereals, Peanuts and Pretzels, stirring until it is coated. Bake at 250 degrees for 45 minutes, stirring every 15 minutes. Spread on absorbent paper to cool.

Artichoke Dip - Great for the Super Bowl

With the Super Bowl coming up this weekend, what a better way to prepare than to come up with some fresh party recipes. Over the next couple of days, I will concentrate on some easy party favorites that you can throw together for your get-togethers.

Artichoke Dip

Ingredients:

1 Can of Artichokes (drained and quartered)
1/2 Cup Sour Cream
1/2 Cup Mayonnaise
3/4 Cup grated Parmesan Cheese
3 Green Onions - chopped

Mix all ingredients and bake at 350 degrees for twenty minutes. Serve with crackers, tortilla chips or french bread.

Easy Chocolate Tortilla Desserts

Here's a real quick dessert that you can throw together in about ten minutes.

Ingredients:

White - soft flour tortillas (large)
1 Cup Sour Cream
1/2 Cup Chocolate Chips
1/4 Cup Confectioner's Sugar
1 tsp. vanilla
Hershey's syrup
cinnamon

Combine sour cream, chocolate chips, sugar, and vanilla in a sauce pan sprayed with cooking spray. Heat on low until chips are melted and all ingredients are smoothly combined. Take a flour tortilla and spread the top with this mixture (about a 1/4 inch thick). Top with a second tortilla. Put in the oven for ten minutes on 300 degrees. Remove, cool for about five minutes. Sprinkle with cinnamon and drizzle with Hershey's syrup. Cut and serve like pie. A la Mode is even better!!! For a delicious variation, substitute chocolate chips for a 1/2 cup of raspberry jam or do 1/4 cup of each for a chocolate/raspberry dessert.

Fruit Juice Pie- A Simple Delicious Dessert Favorite You Can Easily Throw Together

Kookie knows what it is like to have to throw together an easy dessert before work in the morning, so you have something to serve guests that night. An easy solution to this (and one that is sure to be a favorite of yours after you try it) is my Fruit Juice Pie.

Ingredients:

1 small can of either ornage juice, lemonade or limeade concentrate (thawed)
1 can of Eagle Brand Condensed Milk
8 oz Tub of Cool Whip
1 smallcan of mandarin oranges (drained)
1 small can of crushed pienapples (drained)
1 small jar of marachino cherries (drained)
1 graham cracker pie crust

Mix together all ingredients and pour into the graham cracker crust. Cover and Freeze. To serve, take out of the freezer about 1/2 hour before you cut. It's rich, so don't cut real big pieces. serves eight to ten. If you have any leftover filling, freeze it in a plastic container and eat like ice cream later. It's terrific!!!

I swear...you will love this recipe. For some extra pep, serve with sugared strawberries over the top!

Easy, Inexpensive Dinner - Beef and Rice

Kookie knows that you Mom's out there don't have a lot of time to prepare a quick, easy and inexpensive dinner for the family, so she is keeping her eyes open for recipes that are delicious, economical and a snap to throw together. Today, we are going to make Beef and Rice.

Ingredients:
1 Box of Rice-a-Roni Beef $1.50
1 lb of Ground Beef $3.50
1 Onion - diced $0.75
1/4 cup Worcestershire's Sauce $0.25
1 small can mushrooms $1.00

Cook the Rice-a-Roni according to the instructions on the package, substituting 1/4 cup of the water requirements for the Worcestershire's Sauce. Brown the ground beef and the onion together in a separate skillet. Add the can of mushrooms and heat until they are warm and the onions are soft. Mix together with the Rice-a-Roni and serve hot. Cooked carrots or peas make an excellent side dish for this meal. With the vegetable, the whole dinner will most approximately $9.00. Serves 4 to 6. 30 minute prep.
